THERE ARE TWO TYPES OF BEST FRIENDS:
1. The best friend whom you’re so close to. You see them at least twice a week or more. You guys talk a lot and catch up on everything.
2. The type of friendship where you two don’t talk as much but deep down, you know that person's your best friend. Why? Because they understand you even if they barely see you.
I think the friendship between Claudia and I fall in the second category. And I like that. It seems more special. No wait, it IS special! I mean, 11 freaking years man!!! We practically grew up together even though we grew up apart in the last five years, if you know what I mean. As she has described us both as "socially inept" on her blog, I feel perfectly comfortable being in silence with her. :)
It's December 18th once again! A special date which we make it a point to meet up on every single year. It was "founded" by us with another friend who drifted away soon after primary school. Till this day it puzzles me as to why she'd choose not to make the effort to maintain our friendship even though Claudia and I tried. If I don't wish her a happy birthday or send her a christmas card, she wouldn't too. :\
Weren't we a great trio/foursome??? I honestly miss those times we had. It's kind of sad that it has dwindled down to just Claud and I. But oh well, you know what they say!
Don't worry about the people in your past, there's a reason why they didn't make it into your future.Moving on! Claudia and I headed to Nex, which is the new mall at Serangoon and it's freaking huge!! and not to mention near my home. Our homes. Hahaha. So we had lunch at Mad Jack, then bought bubble tea and shopped for our baking ingredients before going over to her house to bake!

Mine: Red velvet cupcakes
Whisking the stubborn frosting mixture which somehow remained liquidy despite adding excess amounts of icing sugar into it. I think we were supposed to use HEAVY whipping cream but we bought the normal one. Resorted to spreading the frosting onto the cupcakes with a spoon. ):

I nearly forgot to add the egg into the batter at the beginning. And after pouring the batter into two cupcake papers, I went "OH SHIT!!!!" A startled Claudia asked "What?!" Then I replied "I FORGOT TO ADD BAKING SODA!!!!"
I laughed at myself for being such a noob while Claudia went -_______- as she helped me pour the batter from the cupcakes back into the bowl and I prepared the baking soda. LOL.
My RED VELVET CUPCAKES turned out pretty nicely! I feel a sense of accomplishment. :D
Claudia told her mom to buy dinner for me even though I told her that I was going to have dinner with my family later on! Obviously she wasn't listening!! Her mom came back with dinner including my share. So I had dinner with Claudia and her mom.
Over dinner, Claudia was telling her mom about how she wanted to get a bicycle for christmas and her mom's reply sounded just like what my mom would say. "No, because our house has no space" and such.
It was also nice to see her animals again. All three dogs and four cats, the new addition would be Gingko the fifth cat. The dogs didn't bark at me like how they would when people enter the house. Cadbury the cat didn't hiss at me!! Truffle is still kinda my favourite cat partly because I played with her when she was just a typical little kitten. My heart aches for her seeing how the unfortunate accident has affected her mental (and physical?) capabilities now. ):
I left some of my cupcakes for Claudia's family and took the rest of them home, along with 6 of her oatmeal cookies and a new packet of flour, some icing sugar, two new bottles of vanilla extract and red food colouring. I didn't use them because it turned out there were some at her house. Good thing we live just two bus stops away from each other. Taking public transport with two handfuls isn't exactly convenient, you know.
Well, I guess you can expect more of me baking in the future! (:
I don't think I'll be meeting her next week since I'm flying off to GuiLin (China) on the 25th. So Merry Christmas, old friend!
